My Slow Braised Lamb Shank was the kind of dish that makes you close your eyes on the first bite. Fall-apart tender, it came served with creole-style lentils, creamed sweet potato, grilled zucchini, and crispy plantain. I half expected the lentils to be dry, but they were full of flavour and texture, earthy yet elegant.
